Only the glassware that will be used should be placed out; if champagne will not be served then the flutes need not be set.

Service Plates – even for formal receptions, service plates may be included. They are usually called “chargers” and are oversized porcelain plates or china that are placed under a dinner plate to provide extra “color” to the table setting all through the first-two courses. They typically come in solid shades or have “banded rims”, and are taken away as soon as the entrée is dished up. They’re not only good for giving a little touch of color to the table setting, but also protects tablecloths.
